200g - Flor de Sal - also known as SALT FLOWER – it is salt of the highest quality, which is intended to real gourmets.

Salt flower (in Portugal and France is called Flor de Sal, Fleur de Sel) is one of the rarest salt at all. It forms on the surface of the salt pans of water like cream on milk, but only under favorable climatic conditions (temperature, humidity, wind force). Its crystals have a few hours to pick up a special network landing nets, otherwise sink. It is also dried in the sun and wind. World-class chefs and foodies consider it as a gem among the salts and appreciate its fine texture and balanced flavor. Salt flower is an excellent point to flavor cooked dishes and cold dishes.

This natural sea salt comes from the National Park on the coast of southern Portugal. Salt is formed by evaporation of sea water, salt is manually collected and dried in the sun and wind and then carefully packed. It does not undergo any refining processes and contains no additives. For manual production, chemical and microbiological quality is guaranteed by certificates SATIVA and CERTIPLANET.

Salt pans tradition dates back to Phoenician times. Later, the Romans improved it, but practically remained unchanged throughout 2000 years. Salt pans, where our salt comes from, were established according to the thousand-year tradition as part of the family business at the beginning of the twentieth century by the great-grandfather of the current owner and manufacturer.

Traditional manufacturing is based on a dry, hot climate and crafts workers.

During processing, harvesting or maintenance is not used heavy machinery. All processes are manual, using ancient methods and techniques. Our salt is created by the proces above and collected during the summer. This way of "manufacture" and collection, the salt retains its valuable minerals and trace elements naturally contained in sea water, especially magnesium, potassium, calcium, selenium, iodine, and many others.

Natural sea salt settles to the bottom of clay, crystallization pans through natural evaporation of sea water with a high salt concentration. Approximately after three weeks it is being harvested by traditional wooden "rake" and allowed to dry on the edge of the basin sun, in the form of a small hill. So it retains valuable minerals, trace elements and their typical residual moisture, which is called "Mother of Water" .This salt is suitable for everyday cooking.

• There are no post-harvest refined processes, ie:

* Salt is NOT chemically treated

* Salt is NOT crystallized again

* Salt is NOT artificially dried

• Natural sea salt contains no added substances

 

 

NaCl content of this natural product is generally between 95 to 98 percent, with the remaining percentage does not contain impurities such as refined salt forms, but rather consist of natural residual moisture on the sun-dried salt. This residual moisture is referred to as "Salt Mother" and in part serves as a support tool for countless minerals and trace elements naturally contained in sea water.

Conditions of natural sea salt

Indicators for truly unrefined natural sea salt are therefore: higher moisture content (between 3-8 percent) and a low content of NaCl and with only a slight level of soiling. Another great advantage against sophisticated types of salt is increased content of magnesium, calcium and potassium (among other minerals).

The used sea water can not be contaminated by industrial and agricultural contaminants (oil, soot, heavy metals, pesticides, nitrites, etc.) and even germs (bacteria, fungi etc.). As a control proof serves water analyzes and the extracted salts.

Manual production and harvesting

The whole process is based on the millennium tradition and it is practically unchanged. Crystallization takes place in small basins (4 x 9 m) impregnated with concentrated sea water and subsequently manually and carefully collected from the bottom of the pan (coarse-grained salt, which is finely grounded.

Conditions for the highest quality of hand-picked salts are therefore: clean sea water and thorough and careful harvesting. If these conditions are true, it is not necessary to wash the salt.

Is a natural sea salt better?

Anyone, who has a natural sea salt (as described above) tasted and compared with other types of salt, do not hesitate to answer this question "yes". But because of the individual's taste is hard to argue with that, there are a few facts:

• Natural sea salt highlights the flavor of food.

• Natural sea salt is valuable for health.

• Natural sea salt is produced in a sustainable way, which is beneficial for the environment, the economy and consumers.

Traditional production and harvesting of natural sea salt probably began in the days of the Phoenicians and remained almost unchanged throughout 2000 years.

While the establishment of many industrial salt fields changed the face of the coast of southern Portugal 40 years ago, the traditional salt pans contribute to the conservation of nature enhance its ecological value. Manual harvesting and maintenance minimize contamination of water and soil pollutants. Around the salt pans and in reservoirs concentrating the sea water lives countless halophilic (salt-loving) plants and birds. Water birds such as flamingos, herons, waders and many

others here are nesting all around the year. Fish and crustaceans, which they live here, first they serve as food for birds, and secondly they are reliable bio-indicators of water safety.
